Ingredients:
1/2 kilo beef pasanday (fillets)
Salt (to taste)
1 tsp garlic paste
1 tsp ginger paste
2 tbs unripe papaya (grinded)
2 tbs yogurt
1 tsp chili powder OR 1 tbs chopped green chilies
1 tbs oil
Directions:
1. Mix together all the spices and yogurt and papaya and coat the beef with it.
2. Leave to marinate for 5-6 hours preferably overnight.
3. Then barbeque over charcoal or you can bake it in an oven

<p><strong>Ingredients:</strong><br />
1 kg fish surmai, boneless fillets<br />

1 tbsp cumin seeds, roasted and powdered<br />
2 tbsp white vinegar<br />
4 lemons<br />
2 tbsp soya sauce<br />
4 tbsp oil<br />

<p><strong>Directions:</strong><br />
<strong>1.</strong> Sprinkle white vinegar on fish, leave for 10 minutes and wash.</p>
<p><strong>2.</strong> Mix all ingredients except oil and marinate fish for 1 to 1 ½ hours.</p>
<p><strong>3.</strong> Thread on skewers and cook on hot coals.</p>
<p><strong>4.</strong> Apply a little oil with brush and squeeze lemon juice on fish.</p>
<p><strong>5.</strong> Serve with tamarind chutney.</p>

<p><strong>Ingredients:</strong><br />
2 tbs yogurt<br />

<p><strong>Directions:</strong><br />
<strong>1.</strong> Mix together all the spices and yogurt and papaya and coat the beef cubes with it.</p>
<p><strong>2.</strong> Leave to marinate for 5-6 hours preferably overnight.</p>
<p><strong>3.</strong> Then barbeque over charcoal.</p>

<p>I never wanted to make Chicken Tikka, not because I don&#8217;t like, because I don&#8217;t have BBQue items with me and when I make it on stove it doesn&#8217;t cook completely, some raw meat use to be always there&#8230; so here is how I do it now:</p>
<p><strong>Ingredients:</strong><br />
Chicken<br />
Shaan Masala (yes, you need it)<br />
2 tablespoon ghee<br />
Salt to taste<br />
1 teaspoon garlic paste<br />
1 teaspoon ginger paste<br />
1 teaspoon chili powder<br />
Ajinomoto to taste</p>
<p><strong>Directions:</strong><br />
<strong>1.</strong> Using a sharp knife, make 3 or 4 deep incisions in each chicken quarter. Place the chicken pieces in a large bowl and rub the lemon juice into the incisions.<br />

<p><strong>2.</strong> Mix ginger, garlic, chili powder, salt, ajinomoto, shaan masala in ghee and mix well.</p>
<p><strong> </strong></p>
<p><strong>3.</strong> Pour the mixture on chickens, coat them well, cover and leave to marinate for 4-5 hours.</p>
<p><strong>4.</strong> Now by using metal skewers, grill it on a very low heat on stove, while grilling give bit of cutting on the chicken and pour little ghee on turning.</p>
<p><strong><strong>NOTE:</strong> heat should be low, do give cuts while grilling.</strong></p>
